Our story
Wiltshire Game grew from estate larders where venison and pheasant once fed staff kitchens and were given away to neighbours before a formal market existed. We formalised what country people always understood: wild meat deserves skilled handling, transparent provenance, and customers who cook with seasonality in mind. Our team links keepers, trained shots, and butchers across Wiltshire estates who share standards for welfare, hygiene, and sustainable harvest.
Game is wild — not factory farmed in disguise. Deer numbers are managed to protect woodland and crops; birds come from shoots that respect bag limits and habitat stewardship. Meat is collected quickly, chilled properly, and aged briefly where beneficial before butchery. We prepare joints, fillets, and oven-ready birds for cooks who may never have handled game before, with guidance on cooking times and flavours that pair well.
Seasonality defines us. When the season closes, the product stops — we do not freezer-fill to pretend year-round availability. Venison appears when culling plans allow; pheasant and partridge peak in autumn and winter. Labels name estate and species because traceability is part of respect for the animal and the customer.
