The story

Our story

I kept my first hive behind a Shropshire cider orchard because a neighbour said bees would improve his pollination and my curiosity in equal measure. That colony taught me more than any book — patience, observation, and humility before a creature that tolerates us rather than needs us. Shropshire Hive grew from two hives to dozens scattered across the Marches, each sited where forage is varied and pesticides are absent.

Our honey is raw — extracted, coarse-filtered to remove wax, and jarred without overheating that destroys enzymes and nuance. We label by season and location because blossom honey from an apple orchard tastes nothing like heather from the Long Mynd. We never bulk-blend to a uniform flavour; each jar is a record of a place and year. Comb and cut comb appear when colonies allow, always with welfare first.

Preserves came later, when customers asked for accompaniments that matched our honey's honesty. We cook in copper pans, use less sugar than conventional recipes demand, and source fruit from Shropshire growers where possible. Strawberries, plums, and damsons are handled simply — lemon, perhaps a little honey instead of mountains of refined sugar — so the fruit remains the point.

We plant pollinator margins beside apiaries, speak at local beekeeping evenings, and refuse to heat honey hot enough to erase the work of a whole season's forage. Colonies teach humility; we try to listen before we harvest.

Today Shropshire Hive supplies Maxwells with honey and preserves that reflect our beekeeping values. We mentor new beekeepers, plant pollinator margins, and treat colonies as livestock deserving health and rest. Shropshire is unhurried country; we think its sweetness should taste that way too, jar after jar, season after season, without hurry, uniform blending, or needless processing of any kind whatsoever, as a matter of principle we will not bend.
